I have been making this banana bread for years and it is almost always gobbled up by my kids as soon as it cools down so they can eat it! It is great for breakfast or a snack and super quick to make!
3 ripe bananas
2 eggs well beaten
2 cups whole wheat flour
3/4 cups sugar (I use cane sugar or sucanat)
1 tsp salt
1 tsp baking soda
2 unsweetened applesauce cups (from kids lunch stash) apple or apple cinnamon flavour
1/2 cup water
1/2 cup semi sweet chocolate chips
Preheat oven to 350 degrees. Grease loaf pan with coconut oil. Mash bananas and eggs together. Add dry ingredients, apple sauce and water as needed to moisten batter. Add chips and stir. Pour into loaf pan and bake for about 1 hour.
This recipe freezes great so I often make two.
So don’t throw away those ripe bananas instead whip up some banana bread. Tip – if your bananas are too ripe you can also freeze them and unthaw when you need them. You may need less water in the recipe if you do this which is why I say to add water just till the batter is moist like a muffin batter.
You can also add walnuts if you like a little crunch.
