Asparagus In The Raw Salad

Spring brings with it an abundance of one of my favourite vegetables on earth. Barbecued gives a fantastic nutty flavour, Steamed with lemon juice and olive oil a super easy side done in minutes.  But have you ever tried it raw?

In less than 5 minutes this recipe is a sure fire hit at your next barbecue and super healthy for you.  Asparagus is a natural detoxifier and is rich in asparagine which is an amino acid that helps cleanse the kidneys of waste.  (Perfect for those summer days where maybe you had an extra bevvie or two).

1 large bunch of fresh asparagus (washed and trimmed)

1 Tbsp white vinegar

2 Tbsp extra virgin olive oil

1 Tbsp fresh lemon juice

1 pinch of sea salt

1 pinch of black pepper

2 Tbsp chopped unsalted pistachios

Use a potato peeler and shave/peel each asparagus spear into a large bowl.  In a small bowl whisk together the vinegar, oil, lemon juice, salt and pepper.  Pour over asaparagus. Add Pistachios and toss.

See… minutes!

Serve along side fish or barbecued chicken!  Amazing with barbecued salmon steaks!
